Lalagirl's homemade "KING" of salads!!


HISTORY OF CAESAR SALAD
This popular dish was originally created in 1924 by Italian chef Caesar Cardini at his restaurant in Tijuana, Mexico and was prepared and served right at the table.

Ingredients
1 large head romaine lettuce
1 cup olive oil
3 cups French bread
3 large cloves garlic (Lalagirl loves garlic)
4 anchovy filets
1 teaspoon Worcestershire sauce
1 teaspoon dry mustard
2 tablespoon FRESH lemon juice
1 1/2 teaspoon fresh ground black pepper
1 teaspoon coarse ground salt
2 egg yolks for large eggs
1/2 cup grated parmesan cheese
1/4 cup shredded parmesan cheese

Procedure:
  1. Wash and drain the romaine lettuce, pat it try. Trim romaine lettuce, then cut into 1 1/2 inch pieces. Refrigerate for 30 minutes to crisp the leaves.
  2. To make the croutons, cut bread into cubes. Bake in the oven at 350 degree celsius for 8 minutes.
  3. Peel garlic cloves then put in a large wooden salad bowl. Mash the cloves against the sides of the bowl with the back of a wooden spactula. Rub the pieces against the bowl until they begin to disintegrate. Remove most of the mashed garlic and discard.
  4. Add anchovies and repeat the procedure used with the garlic, but leave the anchovy pieces in the bowl.
  5. Add dry mustard, Worcestershire sauce, lemon juice, black pepper, and egg yolks and blend well.
  6. Slowly drizzle in the olive oil mixing with a wire whisk until a creamy mayonnaise type dressing forms.
  7. Add lettuce, croutons, Parmesan cheese and salt. Toss everything together and serve directly from the salad bowl!
  8. This is optional ~ lalagirl usually add crabmeat on top of the salad !! DELICIOUS ...
